Stewarding

Kitchen ware-wash and BOH hygiene

  • Ware-wash, pot wash and kitchen hygiene for UAE hotel and catering back-of-house
  • Machine operation, chemical safety and HACCP discipline on busy F&B shifts
  • Banquet, Ramadan and outlet peaks without overloading chef brigades

Stewarding teams keep back-of-house kitchens running: pot and pan wash, ware-wash machine operation, chemical safety, garbage handling and end-of-service breakdown support for hotels, restaurants and staff canteens.

Understand the role

Core responsibilities

  • 1

    Ware-wash & pot-wash operation

Run dishwashers and three-compartment sinks, maintain wash/rinse/sanitize temps and keep clean ware flowing to the line during service.

  • 2

    Kitchen hygiene & breakdown

Clean floors, drains, hood trays and waste areas; support end-of-shift breakdown so stations reopen safely for prep.

  • 3

    Chemical safety & PPE

Dilute detergents and sanitizers per SDS sheets, use gloves and non-slip footwear, and report machine faults immediately.

  • 4

    Coordination with kitchen brigade

Prioritize hot pans, banquet inserts and glassware with chefs and F&B supervisors so ticket times are not delayed by ware shortages.

Where this role fits

  • International hotel kitchens

Multi-outlet buffets, all-day dining and banqueting with heavy ware turnover.

  • Staff dining & labour camps

High-volume tray and pot wash on tight meal windows.

  • Standalone restaurants & clubs

Compact BOH areas needing fast turnaround on plates and glassware.

  • Outdoor catering & events

Temporary scullery setups for weddings and National Day functions.

Risks of understaffing or poor fit

  • Cross-contamination when wash temps or sanitizer strength slip during rush
  • Slips, burns and scalds in hot-water and steam-heavy sculleries
  • Service delays when clean pans and inserts run out mid-banquet
  • Municipality findings on grease traps, waste segregation or machine logs

Our deployment approach

Phase 1

Kitchen & scullery audit

We walk your ware-wash layout, machine capacity, chemical storage and peak cover counts before assigning stewarding headcount.

Phase 2

Induction on your SOPs

Stewards train on machine startup, lockout, waste routes, colour-coded brushes and escalation to engineering for breakdowns.

Phase 3

Peak tuning

After the first service cycle we adjust roster size for known spikes-Ramadan iftar, brunch and wedding buyouts.

How we mobilise stewarding

Tap each step to see what happens before and after staff arrive on your property.

Step 1 - Stewarding

Role scoping & headcount

We confirm shift patterns, language needs, uniform standards, PMS or manual workflows, and the supervisor structure you expect on each floor or outlet.

Before mobilisation

  • Share scullery layout, machine manuals and chemical SDS sheets
  • Confirm PPE issue: gloves, aprons, non-slip shoes and cut protection where needed
  • Provide waste, grease-trap and recycling routes
  • Align shift times with kitchen production and banquet load-in
  • List peak dates and expected cover counts for surge planning

After go-live

  • Machine downtime log and recommended maintenance themes
  • Suggested stewarding headcount for next banquet season
  • Chemical usage notes if dilution controls need tightening
  • Option to retain stewards on rolling monthly supply

Run a tighter operation

Best practices for stewarding

Stewarding is the pressure valve of UAE hotel kitchens-when ware-wash falls behind, the whole brigade loses ticket time.

  • Scrape before the rack

Heavy soil on plates blocks jets and slows every cycle during buffet resets.

  • Log wash temperatures each service

Municipality audits expect proof that sanitize steps actually ran hot enough.

  • Keep a panic rack of inserts

Banquet kitchens stall when chafing inserts run dry mid-service.

  • Empty grease traps on schedule

Odour complaints and drain backups start in neglected sculleries.

  • Rotate wet-floor signage

Slip claims spike when night stewards mop without barricades.

  • Separate glass and food soil

Broken glass in pan wash is a safety and contamination risk.

What you gain from this programme

  • Dedicated stewarding headcount so chefs stay on production
  • Supervised teams aligned to your SOP and brand standards
  • HACCP-aware teams for municipality and brand kitchen audits
  • Machine and chemical safety briefings before go-live
  • Documented QA, handover and escalation paths
  • Scale for Ramadan, weddings and new outlet openings
  • Scale headcount for holidays, events and renovations
